Fall into vegetables
This is always a bittersweet time of year...fall is my absolute favorite, but saying goodbye to those long summer days and my sunshine glow is never easy. I go to the farmers market every weekend and these recipes were inspired by what you will find right now. Zucchini, sweet corn, & tomatoes seem to be coming at me in bulk from clients that have so many they don’t know what to do with them.
I always prep my zucchini by shredding it, putting 2 cup portions into Ziploc bags and tossing them into the freezer for making bread or fritters all winter long.
Tomatoes are great boiled down and puréed for pasta sauce or salsa. I put them in mason jars and freeze until I’m ready to make a lazy Sunday lasagna.
Sweet corn broiled or grilled and then trimmed from the cob freezes perfectly to use for southwest nachos or a chicken chili.
